Dark Chocolate Bundt Cake with Blackberry Glaze

Ingredients

Cake

3 cups flour

1 cup sugar

1 1/2 cups black cocoa

1 tablespoon baking soda

1 ½ teaspoon baking powder

1 teaspoon salt

4 eggs

1 1/2 cups buttermilk

1 ½ cups hot water

½ cup oil

½ cup cocoa (for decoration)

Blackberry Glaze

Box of blackberries (about 12)

½ cup of powdered sugar

¼ teaspoon lemon juice

Blackberries, handful for decoration (optional)

Equipment

Measuring cups and spoons

2 Large bowls

Electric handheld whisk

Loaf cake pan lined with parchment paper or buttered and floured

Spatula or knife

Large spoon

Medium bowl

Small bowl

How to

Preheat the oven to 350 degrees Fahrenheit/176 degrees Celsius.

Cake

Mix all the dry ingredients. Then add the wet ingredients and mix with a handheld electric whisk. Pour into the loaf cake pan and bake for 35-40 mins. 

Test if the cake is baked by inserting a toothpick and it should come out clean. Remove the cake from the oven and leave it in the cake pan for about 5 minutes to cool slightly. Then remove and let it cool completely on a wire rack.

As the cake is cooling make the blackberry glaze.

Blackberry Glaze

In a medium bowl, mash the blackberries. A tablespoon at a time, add the powdered sugar and stir. Keep adding the sugar until you get the consistency you’re looking for. Add about a teaspoon of lemon juice as you’re adding the sugar, to add to its tangy taste. You can really add as much or as little of the sugar you want depending on your taste and consistency you’re looking for.

Decorating

Place your piping bag in a cup with the top wide open so you can pour or scoop the blaze into it. Remove the piping bag from the cup and twist the top around so the glaze doesn’t start inching out when you’re piping. Now cut the tip of the piping bag (about ½ inch wide) and start piping the glaze onto the crevices. Don’t worry if your glaze goes all over the place, it will take a few turns to get it right. It will still look and taste good! Throw some blackberries into the hole in the middle of the cake (optional).
