
Honey and Blueberry Scones

Ingredients
3 cups flour
2 1/2 teaspoons baking powder
2 tablespoons sugar
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cups, grated cold butter
1 1/2 teaspoon vanilla extract
2 cups blueberries
1/2 cup honey
1/2 cup butter milk
1 egg whites

How To
Preheat the oven to 425 degrees Fahrenheit. Line a baking tray with parchment paper.
In a large bowl, using a hand whisk mix the flour, baking powder, baking soda, sugar and salt until well combined.
Add the butter to the flour mixture, and using your hands rub the grated butter into the flour mixture until it forms crumbs.
Add the buttermilk, vanilla extract, honey and mix well with a spatula until just combined. Add the blueberries and gently fold them in.
Using a rolling pin, roll out the dough until about 1 inch thick. Using a knife or dough cutter, slice it into six wedges.
Crack the egg whites into a small bowl and whisk slightly.
Brush the scones with the egg whites.
Bake for 10-12 minutes until they start to brown slightly.
Remove and let cool on a wire rack. You can eat them slightly warm or cooled.
