
Jam Cookies

Ingredients
1 cup ghee
2 eggs
¾ cup powdered sugar
¼ teaspoon salt
1 teaspoon baking powder
½ teaspoon vanilla
½ cup custard powder
3 cups flour
1 cup strawberry jam
Equipment
Measuring cups and spoons
Large bowl
Electric whisk (handheld)
Small knife (for spreading the jam)
Baking tray, lined with parchment paper of buttered and floured
How to
Preheat the oven to 350 degrees Fahrenheit/176 degrees Celsius.
Mix the flour, baking powder, salt and custard powder.
Beat the softened ghee and powdered sugar until well combined. Add the eggs one at a time, beating well each time. Add the vanilla and beat. Add the flour mixture and mix by hand until well combined.
Roll out the dough onto a floured surface until ¼ inch thick. Cut out with round cookie cutters. Place on the baking tray and bake for about 10 minutes or until slightly golden. Remove from the oven and let them cool.
Once cool, spread jam on one biscuit and place another biscuit on top of it.
