Ingredients
2 cups flour
1 1/2 cups water, slightly warm
1 full teaspoon instant yeast
1/4 teaspoon salt
Oil for frying
1 cup powdered sugar
Equipment
Measuring cups and spoons
Large bowl
Small bowl
Dinner spoon
Large frying spatula
Baking tray lined with a kitchen towel
Large heatproof sauce pan
How To
Mix all the ingredients together in a large bowl. Mix it really well with your hand for about 5 minutes. Cover with plastic wrap and let it sit in a warm spot until the dough is doubled in size (usually about 1 - 1 1/2 hours).
Heat oil in a frying pan.
Put some water in a small bowl. Set aside.
Scoop some dough in your hand (about a dinner spoon full) and drop it into the oil. Drop a few at a time and turn them over with a large frying spatula as they fry. Once they brown remove them onto the baking tray lined with a kitchen towel. Dip your hand in the water in between dipping the dough so it’s easy to shape them.
Spread the powdered sugar onto a dinner plate.
Once slightly cooled, roll the legemat in the powdered sugar to coat them. Serve with tea!
Tip: you can tell the oil is hot enough to start frying by dipping a small amount of dough in it and it starts bubbling.
