Strawberry Tiramasu

Ingredients

2 cups heavy cream

8 ounces mascarpone cheese, room temperature

1/3 cup & 1 tablespoon sugar

1 ½ teaspoon vanilla extract

1 cup coffee, room temperature

3 cups strawberries, sliced in halves

2 packages lady fingers

Handheld electric mixer

Large bowl

Medium shallow bowl

Spatula 

Serving cup

Ice cream scoop

9 inch oval baking dish

How To

In a large bowl, using the handheld electric mixer beat the heavy cream until soft peaks form. Slowly add the sugar and continue beating. The peaks will become stiff. Add the vanilla extract and beat.

Fold in the mascarpone cheese with the spatula.

Put the coffee in a medium shallow bowl. Dip a lady finger into the coffee and then place it in the bottom of the serving plate. Repeat until the baking dish is lined with the lady fingers. 

Using an ice cream scoop, put 5 dollops of the mascarpone cheese mixture on top of the lady fingers. Spread it out with a spatula. Add a layer of halved strawberries.

Top that with another layer of lady fingers on top of the strawberries. Follow this by adding a layer of cream to the brim of the serving plate. Smooth out the cream.

Decorate the top with the halved strawberries.

Refrigerate for an hour before serving.
