
Yoghurt Cupcakes
Ingredients
2 eggs
2 tablespoons flour
3/4 cups yoghurt
Juice of 1/2 lemon
¼ cup sugar

12 hole cupcake pan
Cupcake paper liners
Measuring cups and spoons
2 large bowls

How To
Preheat the oven to 350 degrees/176 Celsius. Line the cupcake pan with paper liners.
Separate the eggs.
In a large bowl, beat the egg whites until stiff peaks form. Set aside.
In a large bowl, beat the yoghurt, sugar, egg yolks and lemon juice until the mixture is pale in color.
Fold the egg whites into the yoghurt mixture. Fold in gently until well combined.
Pour into the cupcake holes about halfway up and bake for about 35-40 minutes.
When the top is slightly browned, the cupcakes are ready.
