Banana Bread with Caramel and Nuts Frosting

Ingredients

¼ cup buttermilk

½ cup brown sugar

½ cup butter, melted

2 ripe bananas, mashed

1 egg

2 teaspoons vanilla extract

1 ½ cup flour

¾ teaspoon salt

1 teaspoon baking powder

¾ teaspoon baking soda

How To

Preheat the oven to 350 degrees Fahrenheit/176 degrees Celsius. Butter and flour a 9 inch loaf pan.

In a medium bowl, mix the flour, baking powder, baking soda and salt. Set aside.

Using a handheld electric whisk, in a large bowl beat the egg, sugars, vanilla extract and butter until pale in color.

Add the mashed bananas to the sugar and egg mixture, and fold in.

Add half the dry ingredients and fold in with a spatula.

Add half the butter milk and mix in with the spatula.

Add the remaining dry ingredients, followed by the buttermilk. Mix until well combined.

Pour into the loaf pan.

Bake for about 40-45 minutes or until a toothpick inserted into the center comes out clean.

Remove from the oven and let it cool in the pan for five minutes. Remove to cool completely on a wire rack.
