
Pumpkin Bars

Ingredients
Cake
2/3 cup brown sugar (if you don’t have brown sugar, use 2/3 cup white granulated sugar mixed with 1 teaspoon molasses)
8 tablespoons unsalted butter, melted
1 egg, room temperature
1 cup pumpkin puree
1 teaspoon vanilla extract
1 1/2 cups flour
1 teaspoon cinnamon
1/4 teaspoon baking soda
1/4 teaspoon salt

How To
Preheat the oven to 350 degrees Fahrenheit/176 degrees Celsius.
In a medium bowl, mix the cooled melted butter and brown sugar with a hand whisk until well combined.
Add the pumpkin puree, egg, vanilla extract. Whisk well until well combined, and forms a thin and smooth batter. Set aside.
In a large bowl, mix the flour, baking soda, cinnamon and salt. Add the pumpkin puree mixture to the flour mixture and whisk well. It will be a thick batter.
Spoon the mixture onto the cake pan, and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
Remove from the oven and let the cake cool completely.
Spread the cream cheese frosting over the top of the cake. Enjoy!
